Sift the flour into a bowl and make a well in the center.
Add the dried yeast, sugar, and a pinch of salt to the well. Add the lukewarm milk and stir lightly. Let stand for 5 minutes to activate the yeast.
Add the eggs and softened butter and knead everything into a smooth dough (best done by hand or with a food processor). The dough should be elastic but not too sticky. Add a little more flour if necessary.
Cover the dough and let it rise in a warm place for about 1 hour, until it has doubled in size.
2. Prepare the filling:
With fresh strawberries: Chop the strawberries and bring to a boil in a saucepan with the sugar and lemon juice. Simmer for about 10 minutes, until the strawberries have a jam-like consistency. Let cool.
With strawberry jam: Simply warm the jam slightly so it can be easily piped into the doughnuts.
3. Shape the doughnuts:
Roll out the risen dough on a floured surface (about 1-1.5 cm thick).
Cut out circles using a round cutter (or a glass). Let the dough circles rise for another 15 minutes.
4. Fry:
Heat the oil in a large pot to approximately 170°C (350°F) (best to check with a thermometer).
Carefully place the donuts in the hot oil and fry for 2–3 minutes on each side until golden brown. They should expand and become fluffy.
After frying, drain the donuts on paper towels.
5. Fill:
Using a piping bag with a long nozzle, pipe the strawberry filling into the cooled donuts.
Dust the donuts with powdered sugar or, if desired, decorate with melted chocolate.

Serve:
These strawberry donuts taste best when fresh and still slightly warm! You'll see, they're so irresistible, they'll be gone in no time.
I can totally understand why you're in strawberry donut heaven! 😋
