Prepare the dough. Preheat the oven to 220° degrees.
Finely chop the onion, red pepper and garlic.
Chop the pepper into small cubes.
Heat the oil in a frying pan and fry the onion, red pepper and garlic lightly. Turn off the heat and add the pepper and then the minced meat (this does not have to be completely cooked because it will still go in the oven).
Stir in the tomato puree, cumin, paprika powder and a pinch of salt and pepper. If necessary, add a few tablespoons of water to make the mixture a little smoother.
Divide the dough into 4 equal pieces and roll them into balls. Roll this out into a long oval shape and place it on a baking sheet lined with baking paper (I used 2 per baking sheet).
Spoon some of the minced meat mixture onto the dough and spread it over it, leaving the edges free. Fold the edges slightly over the filling.
Beat the egg in a bowl and brush the edges of the Turkish pides with it. Then sprinkle them with sesame. Bake the Turkish pides in the oven for about 20 minutes.
