Prepare the patties: In a large bowl, combine the lean ground beef, breadcrumbs, milk, onion soup mix, and dried thyme. Mix thoroughly until all the ingredients are well combined.
Shape the patties: Divide the ground beef mixture into 8 equal portions and shape each portion into a flat, oval patty.
Layer onions in slow cooker: Arrange the sliced white onion evenly in the bottom of your slow cooker.
Brown the patties: Heat the extra virgin olive oil in a large skillet over medium-high heat. Lightly dredge each beef patty in the all-purpose flour, coating both sides.
Sear the patties: Place the floured patties in the hot skillet and brown them on both sides until they are nicely browned. This step adds flavor and texture to the dish.
Place patties in slow cooker: Place the browned beef patties on top of the sliced onion in the slow cooker, stacking them alternately to fit.
Prepare the gravy: In a separate bowl, stir together the condensed cream of chicken soup, water, and au jus mix until well combined.
Pour gravy over patties: Pour the gravy mixture evenly over the beef patties in the slow cooker.
Cover and cook: Cover the slow cooker with the lid and cook on the low setting for 4-5 hours, or until the beef patties are cooked through and tender.
Serve: Once the Salisbury steaks are cooked, serve them hot with the flavorful gravy and cooked onions. They pair well with mashed potatoes, rice, or your favorite side dishes. Enjoy!
