Instructions:
Perfect Boiled Eggs
Gently place the eggs in a shallow pot.
Fill the pot with enough water to completely cover the eggs.
Bring the water to a boil, then immediately turn off the heat.
Cover the pot and let the eggs sit in the hot water for 15-20 minutes.
Cajun Egg Filling
Peel the boiled eggs and slice them in half lengthwise. Carefully remove the yolks and place them in a medium-sized bowl. Arrange the halved egg whites on paper towels to dry.
To the bowl with the egg yolks, add the mayonnaise, hot sauce, sweet relish, 1-2 tsp of Old Bay seasoning, garlic powder, and 2 Tb of fresh chopped dill.
Mix all the ingredients together until the egg yolk mixture is smooth and creamy. Taste and adjust the seasonings (including salt, pepper, and hot sauce) to your preference.
Cover the bowl with the egg yolk mixture and set it aside.
Cajun Shrimp
In a medium-sized pan, heat the cooking oil over medium-high heat.
Pat the fresh shrimp dry with a paper towel. Add 2 tsp of Old Bay seasoning to the shrimp and stir until they are well coated.
Sauté the shrimp until they are cooked through (if raw) or until they are slightly charred. This should take a few minutes.
Halfway through the cooking time, squeeze about 1 teaspoon of lemon juice over the shrimp.
Plating Cajun Shrimp Deviled Eggs
Scoop the prepared egg yolk mixture evenly into the hollows of the egg white halves.
Top each filled egg white with one cooked Cajun shrimp.
Garnish the deviled eggs with a sprinkle of paprika and a pinch of the remaining fresh chopped dill.
Enjoy your Cajun Shrimp Deviled Eggs!
