Canning lemons in jars is a traditional method that not only extends their shelf life but also enhances their flavor. This process allows you to keep lemons fresh and edible outside of the refrigerator for up to a year. Commonly used in Mediterranean and Middle Eastern cuisine, canned lemons add a unique tangy and salty flavor to dishes.

Here's how to preserve lemons at home and enjoy them for months!

Ingredients:
6-8 lemons (organic, unwaxed is best)

1/4 cup coarse sea salt (more if needed)

1-2 additional lemons for the juice

Sterilized glass jar with a tight-fitting lid

Optional spices: Bay leaves, peppercorns, cloves (for added flavor)

Instructions:
1. Prepare the lemons:
Wash the lemons thoroughly to remove any dirt and wax.

Trim off both ends of each lemon.

Cut each lemon into quarters lengthwise or crosswise, without cutting all the way through, so the base remains intact.

2. Pack with salt:
