Cook the eggs for about ten minutes and peel them.
Chop the shallot as finely as possible.
Whisk the mayonnaise.
Peel the shrimp. Cut the eggs in half, carefully remove the yolks, mash them, and add the mayonnaise and seasonings.
Mix everything together and pipe the mayonnaise into the whites using a fluted piping bag.
Arrange the shrimp and sprinkle with a pinch of paprika.
