Slice the Sausages: Cut the sausages into even circles (about 1–2 inches thick). If you’re using cocktail sausages, they can be left whole.
Shape with Toothpicks: If using sausage slices, form them into small circles and secure with wooden toothpicks.
Prepare the Cheese and Olives: Slice mozzarella cheese and olives into thin pieces to fit inside the pastry layers.
Step 2: Roll Out the Puff Pastry
Sprinkle a clean surface with a small amount of flour to prevent sticking.
Roll out the puff pastry into an even sheet, ensuring it’s about 3–4mm thick.
Use a cookie cutter or a glass to cut circles slightly larger than the sausage slices.
Step 3: Assemble the Sausage Bites
Place a circle of puff pastry on the floured surface.
Add a dollop of ketchup to the center of each pastry circle and spread it lightly.
Place a slice of mozzarella on top of the ketchup, followed by a sausage circle.
Top with an olive slice for an added burst of flavor.
Wrap the puff pastry around the filling, pinching the edges lightly to secure.
Step 4: Prepare for Baking
Preheat your oven to 180°C (350°F).
Arrange the assembled sausage bites on a baking tray lined with parchment paper.
Brush each pastry bite with beaten egg to give it a golden, shiny finish.
Sprinkle lightly with salt and freshly cracked black pepper.
Step 5: Bake to Perfection
Place the tray in the preheated oven and bake for 15–20 minutes, or until the puff pastry is golden brown and crispy.
Remove from the oven and allow the bites to cool slightly before serving.
Step 6: Serve and Enjoy!
Arrange the puff pastry sausage bites on a serving platter and enjoy them warm. These are delicious on their own, but you can also serve them with additional ketchup, mustard, or your favorite dipping sauce.
