1 tablespoon of olive oil
1 tablespoon of balsamic vinegar

2 tablespoons of fresh basil, chopped
Directions
In a large bowl, combine the chopped tomatoes and crumbled saltine crackers.
In a small bowl, whisk together the mayonnaise, olive oil, and balsamic vinegar until smooth.
Pour the dressing over the tomato and cracker mixture and gently toss to combine.
Season with salt and pepper to taste.
Sprinkle the chopped fresh basil over the top and give it a final toss.

Variations & Tips
For a bit of a kick, add a pinch of red pepper flakes to the dressing. You can also substitute the saltine crackers with any other type of crackers you have on hand, like Ritz or whole wheat crackers.
