800g potatoes
Choose varieties like Bintje or Russet, which are ideal for mashing thanks to their high starch content.

4 eggs (whites and yolks separated)
Use fresh eggs for better flavor and stiffer whites.

200ml double cream
You can also use light cream, but it has less flavor.

150g grated cheese
Choose a hard cheese like Gruyère, Comté, or Cheddar for its rich flavor.

50g melted cheese
Mozzarella, Raclette, or another soft cheese will provide a nice stringy texture.

50g butter
To coat the potatoes and add richness to the mash.
