Melt-in-Your-Mouth Sponge Cake

Preheat oven to 180°C (350°F) and grease a baking pan with butter and flour.

In a large bowl, beat the eggs with sugar until light and fluffy.

Stir in the milk and melted butter until well combined.

Sift the flour and baking powder into the bowl and gently fold in.

Add lemon zest if desired for a fresh citrus touch.

Pour the batter into the prepared pan and bake for 30–35 minutes, or until a toothpick comes out clean.

Remove from oven and allow to cool slightly before unmolding.
