Knacki, cheese and herb appetizer bites For 24 appetizer bites

Preheat your oven to 180°C (gas mark 6).
Cut the Knacki sausages in half lengthwise, then cut each half into 3 small pieces (a total of 24 pieces). In a bowl, mix the grated cheese, crème fraîche, herbs, mustard, salt, and pepper.
Prepare the puff pastry:

Roll out the puff pastry on a clean surface.
Cut it into 24 small squares (approximately 5 cm squares).
Assemble the puff pastry:

Place a small spoonful of the cheese mixture on each square of pastry.
Place a piece of sausage in the center of each square.
Fold the corners of the pastry toward the center to enclose the sausage and cheese.
Bake:

Beat the egg in a bowl and brush the puff pastry with the beaten egg to give them a nice golden color.
Place the puff pastry on a baking sheet lined with parchment paper.
Bake for 15-20 minutes, until the pastry is golden brown and puffed.
Serve:
