Preheat the oven: Preheat the oven to 200°C (180°C for a fan oven). Line a small loaf pan (approximately 20×10 cm) with parchment paper.
Mix dry ingredients: In a large bowl, mix together flour, salt, baking powder, and garlic powder (if using).
Add the cheese: Add most of the grated cheese (about 150 g) to the dry ingredients and mix.
Add the yogurt: Pour the plain yogurt into the flour and cheese mixture.
Mix the dough: Using a wooden spoon or spatula, mix the ingredients until a sticky dough forms. Don’t overmix!
Pour into pan: Spoon batter into prepared loaf pan and smooth top evenly.
Topping: Drizzle the top of the dough with olive oil and sprinkle with the remaining grated cheese (approx. 50 g). If using, sprinkle with chopped fresh herbs.
Baking: Bake the bread in the preheated oven for approx. Bake for 25 to 30 minutes or until the top is golden brown and a toothpick inserted into it comes out clean.
Cooling and serving: Remove the bread from the oven and let it cool in the pan for a few minutes. Then carefully remove it from the mold and place it on a wire rack to cool completely (although it’s also delicious warm!). Serve sliced.
