1 green apple, peeled and chopped (the apple acts as a natural thickener and adds sweetness to the jam)
1 cinnamon stick (optional, but adds depth of flavor)
Water, to taste (to lightly cover the fennel while cooking)
Directions:
In a large saucepan, add the chopped fennel, green apple, lemon juice and zest, and cinnamon stick (if desired).
Add enough water to lightly cover the fennel.
Bring to a boil, then reduce heat and simmer for about 30-40 minutes, or until the fennel is tender and the fruit has reduced to a jam-like consistency. Remove the cinnamon stick and use an immersion blender to blend the mixture until smooth and even.
Taste the jam and, if necessary, add more lemon juice to balance the flavors.
Transfer the jam to sterilized jars and seal tightly.
Store the jars in the refrigerator and consume within 1 to 2 weeks.
