Ingredients:
300g head cheese

2 red onions

6 small gherkins

2 tablespoons crushed pistachios

1 tablespoon white balsamic vinegar

1 teaspoon wholegrain mustard

1 tablespoon olive oil

2 tablespoons neutral oil

1 tablespoon chopped parsley

Salt and pepper

Preparation:
Cut the head cheese into thin slices, then into wide strips. Peel and slice the onions, then cut the gherkins into small rounds. Place all these ingredients in a salad bowl.

In a bowl, mix the mustard, vinegar, a pinch of salt, and pepper. Gradually add the oils, then the crushed pistachios.

Pour the dressing into the salad bowl and add the chopped parsley. Stir gently, season with salt and pepper if necessary, and refrigerate covered with plastic wrap until ready to serve the head cheese salad.
