Beat the egg yolks and sugar: Separate the egg yolks. Mix the egg yolks in a heatproof bowl with half the sugar and a pinch of salt.
Steam thickening: Place the bowl over a pot of boiling water (so that the bottom of the bowl does not touch the water). Cook the egg yolk mixture, stirring constantly, for approx. Cook for 5 to 7 minutes until thickened and lightened in color. Remove from heat and let cool completely.
Beat the egg whites: In a clean, grease-free bowl, beat the egg whites with the remaining sugar until stiff peaks form.
Whip the cream: In another bowl, whip the cold cream until stiff peaks form.
Add lemon flavor: Add lemon zest and freshly squeezed lemon juice (and limoncello, if using) to the cooled egg yolk mixture. Mix everything together.
Carefully fold in the foam: first, stir a little whipped cream into the lemon and yolk mixture to loosen it. Then, carefully and with wide movements, incorporate the rest of the whipped cream and the egg whites to keep the air in. If using, now fold in the crumbled amaretti biscuits.
Molding and freezing: Pour the lemon mixture into a rectangular pan (e.g. a loaf pan) previously lined with aluminum foil. Smooth the top. Cover the top with plastic wrap and place in the freezer for at least 4 to 6 hours, but it is best to freeze overnight.
Preparation method: Remove the semifreddo from the freezer about an hour before serving. 10-15 minutes to soften a little and make cutting easier. Uncover the can, remove the aluminum foil, cut into slices and decorate with fresh mint leaves or lemon slices.
Tips and variations:
Individual servings: You can also prepare individual servings in smaller molds or cups.
With other citrus fruits: You can use oranges or limes instead of lemons or in addition to them.
With fruit: You can add fresh or frozen fruit (e.g. berries) between the layers of semifreddo or on top.
With syrup: You can serve it with fruit syrup (for example, raspberry syrup) or chocolate syrup.
