1. Prepare the shashlik skewers:
Start by alternating the meat, onions, bell pepper chunks, and optionally the pineapple chunks. Place the skewers in a shallow dish for easier grilling. You can also add other vegetables or different types of meat, depending on your preference.
2️⃣ Making the shish kebab sauce:
Heat the oil in a saucepan and briefly sauté the chopped garlic until fragrant. Add the tomato paste and fry for one to two minutes to allow the flavor to develop. Now add the passata and stir well. Add the red wine vinegar, brown sugar, paprika, mustard, and salt and pepper to taste to the sauce. Bring everything to a boil and then simmer over low heat for about 10 to 15 minutes until the sauce has thickened slightly. Stir occasionally to prevent burning.
3️⃣ Grilling the shish kebab:
The shish kebab skewers can now be prepared either on a grill or in a grill pan. If using a grill, place the skewers over medium heat. During grilling, brush the skewers periodically with the prepared sauce to intensify the flavor and keep the meat moist. Make sure the meat is cooked thoroughly, but not dry.
4️⃣ Serving:
When the shish kebabs are nicely grilled, remove them from the grill and serve immediately. You can pour the remaining sauce over them or serve the sauce separately. Serve with side dishes such as rice, salad, flatbread, or even baked potatoes.

• Sauce Variations: You can customize the sauce to your liking, for example, by adding extra paprika for more heat or herbs like thyme and oregano for more depth.
• Meat Choice: Lamb or beef are also excellent for shish kebabs, depending on your preference. You can also marinate the meat to further enhance the flavor.
• Grilling time: The grilling time depends on the type of meat and the thickness of the pieces. Make sure the meat is nicely browned on the outside and remains juicy on the inside.
