Ingredients:
– 4 lb fresh strawberries
– 5 cups granulated sugar
– 2 Tbsp lemon juice concentrate (or fresh)
Instructions:
1. Prepare Strawberries: Clean, wash, and cut strawberries in half. Smash or process to desired chunkiness (6 cups mashed).
2. Combine Strawberries and Sugar: In a large pot, combine strawberries and sugar over medium-high heat. Bring to a boil.
3. Cook Jam: Cook at a rolling boil for 20 minutes, stirring occasionally. Add lemon juice in the last 5 minutes.
4. Fill Jars: Pour jam into sterilized canning jars, leaving 1/4-inch headspace.
5. Seal Jars: Wipe rims with a vinegar-dampened cloth, add caps and rings.
6. Process Jars: Process in a boiling water bath for 10+ minutes. Let jars set for 24 hours.
