Preheat oven to 400Β°F (200Β°C). Grease or line a baking dish.
Par-cook the potatoes:
Boil the thin potato slices for about 5β6 minutes until just tender. Drain and set aside.
Make the cheesy sauce:
In a saucepan, melt butter over medium heat.
Add garlic and onion (if using), sautΓ© until soft.
Stir in flour, cook 1 minute.
Slowly whisk in cream, stir until thickened.
Add salt, pepper, and herbs. Stir in shredded cheese until melted.
Fold in diced ham. Remove from heat.
Assemble the bake:
Roll out the puff pastry slightly to fit your dish.
Lay half the pastry into the dish, pressing it into corners.
Layer potatoes and cheesy ham sauce.
Top with remaining pastry like a pie, or just lay it over and crimp the edges.
Cut slits for steam to escape. Brush with egg wash.
Bake for 25β30 minutes, or until golden and puffed. Let sit 5β10 min before cutting.

Frozen diced hash browns can be used instead of fresh potatoes in a pinch.
