Cast-Iron Bone-In Steak with Melted Cheese

Prepare the Steak:
Remove the steak from the fridge 30 minutes before cooking to bring it to room temperature.

Pat dry with a paper towel, then rub with olive oil and season with salt, black pepper, garlic powder, and smoked paprika.

Sear the Steak:
Heat a cast-iron skillet over high heat until smoking hot.

Add butter and place the steak in the skillet. Sear for 3-4 minutes on one side until a dark crust forms.

Flip and sear for another 3-4 minutes.

Lower the heat to medium and continue cooking, flipping occasionally, until the internal temperature reaches 125°F for medium-rare (adjust for preferred doneness).

Melt the Cheese:
Sprinkle mozzarella and Parmesan over the steak in the last 2 minutes of cooking.

Cover with a lid or loosely tent with foil to allow the cheese to melt.

Rest and Serve:
Remove from heat and let rest for 5-10 minutes to retain juices.

Serve directly in the skillet or transfer to a plate. Enjoy!
