Mix the flour, water, and olive oil in a bowl until a dough forms.

Knead on a floured surface for 5 minutes until smooth.

Rest the dough for 15–20 minutes, covered with a damp towel.

Divide into 4–6 pieces and roll each into a flat round (about ¼ inch thick).

Cook in a hot, dry skillet (no oil) over medium-high heat for 1–2 minutes per side, until puffed and lightly browned.
