Ingredients
1 thawed whole turkey (10–24 lbs)
2 Tbsp extra virgin olive oil
1–3 tsp coarsely ground salt (Kosher or sea salt)
Freshly ground pepper
Instructions
1. Preheat Your Oven
Set oven to 475°F (240–250°C).
Ensure your oven is clean to reduce smoke.
Pour 1–2 inches of water into the bottom of your roasting pan (replenish as needed).
Position the oven rack on the lowest or second-lowest level.
2. Prep the Turkey
Remove giblets, neck, pop-up thermometer, and any trussing.
Rinse the turkey inside and out with cool water, then pat dry thoroughly.
3. Set Up the Roasting Pan
Place turkey on a V or U-shaped rack inside the roasting pan.
No rack? Use a coiled rope of aluminum foil instead.
Make sure water remains in the bottom of the pan during roasting.
4. Season the Turkey
Turkey rubbed in oil and seasoned.
