Preheat the oven to 200Β°C (conventional) or 180Β°C (fan-assisted).

Place a puff pastry sheet on a baking sheet lined with parchment paper.

Top the pastry:

Spread the ham evenly over the pastry.

Sprinkle the Parmesan cheese over the top.

Add some pepper or other herbs, if desired.

Want an extra creaminess? Add some pesto or mozzarella.

Cover with the second sheet of puff pastry.
Press the edges firmly with your fingers or a fork.

Place a glass in the center of the circle (this will be the heart of the sunflower). From the glass outward, cut 16 equal "radii" (slices) as if making pie slicesβ€”but leave the center section alone.

Twist each "radius" twice in the same direction around its axis. This will create a beautiful spiral effect.

Brush with egg yolk and sprinkle with some additional cheese or seeds, if desired.

Bake for 20–25 minutes.
Until the sunflower is golden brown and crispy.
