Clean the beans (if fresh), then cook in salted water for about 8–10 minutes until al dente.
Drain and immediately refresh in ice-cold water – this will keep them nice and green!

Prepare the dressing:
Mix the vinegar, oil, mustard, sugar, salt, pepper, and diced onion well.

Place the beans in a bowl, pour over the dressing, and mix gently. If you like, add fresh parsley or some savory.

Let it sit for at least 30 minutes – but ideally, a few hours in the refrigerator.

It goes perfectly with meatloaf, but also with grilled meat, meatballs, or simply with a slice of bread.
And the best part: It tastes almost even better the next day!
