Urmeli's Apple Crumble Cake with Cinnamon

. Mix the butter with the sugar, pudding powder, and the egg. Mix the flour with the baking powder. Gradually add to the mixture and use the dough hook of a hand mixer to form coarse crumbs. Cover and refrigerate until ready to use.

Peel and core the apples, and dice them finely. Then mix them well with the rum flavoring, lemon juice, vanilla sugar, and cinnamon. Grease and flour a 26 cm springform pan. Press about half of the crumble mixture into the pan, slightly raising the edges. Pour in the apple mixture and smooth it out. Spread the remaining crumble mixture over the apples.

Bake in a preheated oven at 160°C (convection oven) for about 50 minutes, increasing the temperature to 180°C (350°F) for the last 15 minutes if necessary.

Remove the cake and sprinkle with a mixture of powdered sugar and cinnamon, to taste. It tastes best served lukewarm.
