Ultimate Cheesy Scalloped Potatoes

Prep the Potatoes:
Preheat oven to 375°F (190°C) and butter a 9×13-inch baking dish.
Slice potatoes into thin, even rounds and slice the onion. Set aside.
Make the Cheese Sauce:
In a medium saucepan, melt butter over medium heat.
Whisk in flour and cook for 1-2 minutes until lightly golden.
Gradually whisk in milk and heavy cream, stirring constantly to avoid lumps.
Add garlic powder, onion powder, salt, pepper, and Dijon mustard.
Stir in cheddar and Gruyère cheese, mixing until smooth and creamy.
Assemble the Dish:
Layer half of the sliced potatoes into the prepared dish. Sprinkle with onions.
Pour half of the cheese sauce over the potatoes.
Repeat with another layer of potatoes, onions, and cheese sauce.
Bake to Perfection:
Sprinkle Parmesan cheese evenly over the top.
Cover with foil and bake for 40 minutes.
Remove foil and bake uncovered for 20-25 minutes or until the top is golden and bubbly.
Let rest for 5-10 minutes before serving.
