Tortellini casserole tomato-mozzarella

800 g tortellini (2 packs, with cheese filling)

4 tomatoes (large)

250 g mozzarella (2 balls)

1 onion (small)

1 clove of garlic

1 tbsp butter

1 tbsp wheat flour

200 ml cream

2 tbsp tomato paste

Here's how to prepare the tortellini casserole with tomato and mozzarella:
Bring a pot of salted water to the boil and let the tortellini simmer in it for 2 minutes. Then drain them and put them in a large casserole dish.
Cook the tomato cream sauce
Now peel the onion and the clove of garlic and dice both.
Take a small pot and melt the butter in it. Then add the onion and garlic cubes and sweat them until golden brown.
Add the tomato paste and stir it in.
Then sprinkle the flour over it, stir briefly and then pour in the vegetable stock and cream. Boil the tomato sauce briefly while stirring.

Peel the onion and garlic, put them in the mixing bowl and chop them for 5 seconds on level 5.
Push them down with the spatula. Add the butter and sauté the onion-garlic mixture for 2 minutes on Varoma on level 2.
Then add the flour and let it sweat for 2 minutes on level 1 and at 100°C.
Now add the vegetable paste, tomato paste and cream and simmer for 5 minutes on level 1 at 90°C.
Finish the gratin
Wash the tomatoes and cut them into cubes.
Mix them into the tortellini in the casserole dish.
Then pour the tomato sauce over them and stir carefully.
Cut the mozzarella into thin slices and cover your gratin with them.
Then put it in the oven at 200°C top/bottom heat for 15-20 minutes. Your tomato-mozzarella tortellini casserole is ready when the cheese has melted well.
Serve it with fresh basil and coarsely ground pepper for the adults.
