Today we are preparing a very simple but very tasty dessert recipe with homemade caramel!

In a medium saucepan, combine the sugar and water.
Cook over medium heat, swirling the pan occasionally (don’t stir), until the sugar dissolves and turns a deep amber color.
Remove from heat. Carefully whisk in the warmed heavy cream and butter. It will bubble up, so be cautious.
Add a pinch of sea salt, if desired.
Set aside to cool slightly.

Prepare the Panna Cotta:
In a small bowl, sprinkle the gelatin powder over the cold water and let it bloom for 5 minutes.
In a medium saucepan, combine the heavy cream, milk, sugar, and vanilla bean seeds (or extract).
Heat over medium heat, stirring occasionally, until the sugar dissolves and the mixture is hot but not boiling.
Remove from heat. 1 Add the bloomed gelatin and whisk until dissolved.

Assemble the Dessert:
Pour a small amount of caramel into the bottom of each serving glass or ramekin.
Pour the panna cotta mixture over the caramel, filling the glasses.
Refrigerate for at least 4 hours, or preferably overnight, until set.
Serve:
If desired, drizzle a little extra caramel over the top of each panna cotta before serving.
Tips for Success:

Caramel Caution: Be careful when making caramel, as it gets very hot.
Gelatin Bloom: Always bloom gelatin in cold water before adding it to hot liquids.
Panna Cotta Set: Ensure the panna cotta is thoroughly chilled for the best texture.
Vanilla Bean: A vanilla bean adds a beautiful, intense vanilla flavor. If using extract, add it after removing the cream mixture from the heat.
Caramel Consistency: If your caramel becomes too thick while cooling, you can gently reheat it over low heat.
