Heat the olive oil in a large skillet over medium heat. Sear the pork roast on all sides until browned, about 3–4 minutes per side.
Place the seared pork roast in the slow cooker.
In a small bowl, combine the onion soup mix with the chicken broth and minced garlic. Pour the mixture over the pork roast.
Cover and cook over low heat for 8–10 hours, or until the pork is cooked through and pulls apart easily with a fork.
Once the pork is cooked, shred it with two forks and mix it with the juices in the slow cooker before serving.
Variations & Tips
For a different flavor profile, try a packet of ranch dressing mix instead of onion soup. You can also add sliced onions or carrots to the slow cooker for extra vegetables. If you prefer something spicier, add a teaspoon of crushed red pepper flakes to the broth. For a sweet note, a tablespoon of honey or brown sugar can be added to the mixture.
