This Amish casserole was a hit; it was completely gone before I could get another serving

3 cups shredded hashbrowns
1 1/2 cups cottage cheese
2 cups shredded cheddar cheese
6 large eggs
1/2 cup milk
Salt and pepper to taste
Directions
Preheat your oven to 350°F (175°C).
In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is browned and the onion is tender. Drain any excess fat.
In a large mixing bowl, combine the cooked beef and onion mixture with the shredded hashbrowns, cottage cheese, and 1 1/2 cups of the shredded cheddar cheese.
In a separate bowl, whisk together the eggs, milk, salt, and pepper.
Pour the egg mixture over the beef and hashbrown mixture, stirring until well combined.
Transfer the mixture to a greased 9x13-inch baking dish, spreading it evenly.
Sprinkle the remaining 1/2 cup of cheddar cheese on top.
Bake in the preheated oven for 35-40 minutes, or until the casserole is set and the top is golden brown.
Let it cool for a few minutes before serving.
Variations & Tips
For a bit of spice, add some chopped bell peppers or jalapeños to the beef and onion mixture. You can also substitute the ground beef with sausage or bacon for a different flavor profile. If you prefer a vegetarian version, omit the meat and add more vegetables like mushrooms or spinach. For a creamier texture, mix in a cup of sour cream with the cottage cheese.
