Procedure
Prepare the dough: dissolve the yeast with the sugar in the warm water, add the flour and start kneading. Add salt and oil and continue kneading until you get an elastic and homogeneous dough. Cover and leave to rise for about 2 hours until it has doubled in volume.
Roll out the dough: Divide it into two pieces and roll them out with a rolling pin on a floured surface so that you get two discs or rectangles, depending on the pan you choose.
Schiacciata filling: Place the first layer of dough on the greased baking sheet, spread with cheese and ham and sprinkle with Parmesan. Add a little pepper and a dash of oil.
Seal and bake: Cover with the second layer of dough, press the edges well and brush the surface with a little oil. Bake in a preheated oven at 200 °C for about 25-30 minutes until golden brown.
To serve: Remove the schiacciata from the oven, let it cool a little and enjoy while it is crispy and fibrous!
Delicious variations:
Vegetarian: grilled zucchini, smoked scamorza and dried tomatoes.
Gourmet: Gorgonzola, walnuts and bacon.
Easy: ricotta, spinach and a pinch of nutmeg.
