Swiss roll with chocolate drops: super fluffy and delicious

Preparation:
1. Preheat oven:
Preheat your oven to 180°C (top and bottom heat) and line a baking sheet (approx. 30 x 40 cm) with parchment paper.

2. Prepare the cake batter:
Beat the eggs and sugar with an electric mixer on high speed until the mixture is light yellow and fluffy (this takes about 5–7 minutes).

Add vanilla extract and mix briefly.

Sift flour, baking powder, and a pinch of salt over the egg mixture and gently fold in with a spatula or wooden spoon. Mix gently until a smooth batter forms.

3. Bake the cake:
Pour the batter onto the prepared baking sheet and spread evenly.

Bake the cake in the preheated oven for 8–10 minutes, or until a skewer comes out clean and the cake is lightly browned.

Remove the cake from the oven and place a clean tea towel on another surface. Lightly dust the towel with powdered sugar.

Turn the cake upside down onto the tea towel and carefully peel off the baking paper. Using the tea towel, carefully roll up the cake to form a Swiss roll. Let the cake cool completely in the rolled-up state.

4. Prepare the filling:
Whip the cream with the powdered sugar until stiff peaks form.

Once the cream is well whipped, fold the chocolate chips into the whipped cream.

5. Fill the Swiss roll:
Carefully unroll the cooled cake. Spread the chocolate and whipped cream filling evenly over the inside of the cake.

Re-roll the cake, making sure the baking paper or tea towel doesn't bake with it.

6. Finish:
For a beautiful finish, dust the Swiss roll with a little powdered sugar and, optionally, add a few extra chocolate drops for additional decoration.

Place the Swiss roll in the refrigerator for a while to allow the filling to set (about 30 minutes).

7. Serve:
Cut the Swiss roll into nice, even pieces and serve!

Variations and Tips:
Vary the filling: Add chopped nuts like hazelnuts or almonds, or a little coffee extract, for an extra dimension of flavor.

Different chocolate: Use milk chocolate or white chocolate chips if you prefer a different chocolate flavor.

For more airiness: If you want to make the cake even lighter, separate the eggs, beat the egg whites until stiff peaks form, and gently fold them into the batter.

Storage:
The Swiss roll will keep for 2-3 days in the refrigerator if well covered.
