A crispy strudel filled with aromatic pumpkin and tangy feta – ideal for fall!
Ingredients:
350g pumpkin (Hokkaido or Butternut)
200g feta
1 onion
1 garlic clove
25ml white wine
1 package puff pastry
1 egg
1 tsp rosemary
2 tbsp vegetable oil
1 tbsp pumpkin seeds (for sprinkling)
Salt and pepper
Instructions: Heat oil in a pan, add the onion and garlic, and fry until golden brown.
Add the pumpkin pieces, cover with non-alcoholic liquid, and simmer until soft.
Season the mixture with rosemary, salt, and pepper.
Mix the feta cheese and pumpkin seeds into the cooled pumpkin mixture.
Instructions: Place the filling in the center of the puff pastry and brush the edges with egg.
Carefully roll up the dough and sprinkle with pumpkin seeds.
Bake the strudel at 200°C for about 30 minutes until golden brown.
