1. Preheat your oven to 180°C (350°F).
2. Dice the tomatoes, zucchini, and red bell pepper. Thinly slice the onion and mince the garlic.
3. Heat the olive oil in a pan and sauté the onion and garlic until translucent.
4. Add the vegetables and sauté for 5-7 minutes, until softened. Season with salt and pepper, and add the herbes de Provence.
5. In a bowl, beat the eggs with the crème fraîche. Add the grated cheese and mix well.
6. Stir the cooked vegetables into the egg and cream mixture.
7. Pour the mixture into a flan dish.
8. Bake for 30-35 minutes, until the flan is golden brown and cooked through.
