Ingredients
Potatoes: 6 large, peeled and thinly sliced
Eggs: 4 large
Salt: To taste
Black Pepper: To taste
Smoked Sausage: 100 g (3.5 oz), diced or sliced
Green Onions: 2-3 stalks, chopped
Cheese: 100 g (3.5 oz), grated (cheddar, mozzarella, or any melting cheese)
Directions
Prepare the Potatoes:
Preheat your oven to 190°C (375°F).
Peel and thinly slice the potatoes. Place them in a pot of salted water, bring to a boil, and cook for 5-7 minutes until just tender. Drain and set aside.
Prepare the Filling:
3. In a large bowl, whisk the eggs and season with salt and black pepper to taste.
4. Stir in diced smoked sausage, chopped green onions, and half of the grated cheese.
Assemble the Casserole:
5. Lightly grease a baking dish with oil or butter.
6. Arrange a layer of sliced potatoes on the bottom of the dish.
7. Pour half of the egg mixture over the potatoes, spreading evenly.
8. Add another layer of potatoes and pour the remaining egg mixture on top.
9. Sprinkle the rest of the grated cheese over the top layer.
Bake:
10. Bake in the preheated oven for 30-35 minutes, or until the cheese is melted and golden brown, and the casserole is set.
Serve:
11. Allow the casserole to cool slightly before slicing. Serve warm and enjoy!
