1ļøā£ Toast the Coconut:
In a skillet over medium-low heat, add shredded coconut.
Stir frequently and toast until lightly browned (about 3-5 minutes).
Remove from heat and set aside.
2ļøā£ Prepare the Fruit:
Cube the pineapple and place it in a large bowl.
Slice each kiwi in half, scoop out the fruit, and cut into bite-sized pieces.
Thinly slice (julienne) the mint leaves and add to the bowl.
3ļøā£ Make the Dressing:
In a small bowl, combine lime zest, lime juice, and honey.
Whisk until smooth, then pour over the fruit and toss to coat.
4ļøā£ Chill & Serve:
Cover and refrigerate until ready to serve.
Just before serving, sprinkle with toasted coconut.
