Ingredients:
Flour 0: 190 g
Greek yogurt: 150 g
Sodium bicarbonate: 1 teaspoon
Salt: 4 g

How to make balloon bread:
Step 1
Place the Greek yogurt, flour, salt, and baking powder in a bowl. Mix well and knead until a smooth dough forms.

Step 2
Cover with plastic wrap and let rest for 30 minutes.

Step 3
Divide the dough into 4 equal pieces. Form the dough into balls and roll them out with a rolling pin, taking care not to make them too thin.

Step 4
Cover the dough discs with a kitchen towel and let rest for at least 30 minutes.

Step 5
Heat a pan over high heat. When it's very hot, place a disc of dough on top. When bubbles appear on the surface, turn the bread over. Continue turning it until it puffs up like a balloon.

Step 6
Once it's puffed up, cut off one end and fill the bread with your favorite toppings.

Preservation:
You can store the balloon bread in a paper bag for up to 1 day, but it's best to eat it immediately after preparation for the best flavor.
