Preheat the oven to 375°F (190°C). Line a baking sheet or a large baking dish with parchment paper or lightly grease it for easy cleanup.
Prepare the Meatloaf Mixture:
In a large bowl, combine the ground meat, chopped onion, breadcrumbs, milk, egg, ketchup, Worcestershire sauce, garlic powder, thyme, salt, and pepper.
Mix everything together until just combined (don’t overmix to keep the meatloaf tender).
Form the Meatloaf:
Transfer the mixture to the prepared baking sheet and shape it into a loaf. Try to make it even in size so it cooks uniformly.
Make the Glaze:
In a small bowl, combine the ketchup, brown sugar, and Dijon mustard (if using). Stir until well mixed.
Bake:
Spread the glaze evenly over the top of the meatloaf.
Bake for 45-55 minutes, or until the internal temperature reaches 160°F (71°C) and the meatloaf is firm and cooked through.
Serve:
Let the meatloaf rest for 10 minutes before slicing. This helps it hold its shape.
Serve with mashed potatoes, roasted vegetables, or a side salad!
