Preheat and Prepare the Pan: Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish.
Cream Sugar and Butter: In a large mixing bowl, combine the granulated sugar and melted butter. Mix with an electric mixer for 1 minute, or until the mixture is light and airy.
Add Eggs and Vanilla: Add the eggs one at a time to the sugar and butter mixture, mixing well after each addition. Stir in the vanilla extract.
Sift Dry Ingredients: In a separate small bowl, sift together the cake flour, baking powder, and salt.
Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Avoid overmixing.
Fold in Sour Cream: Gently fold the sour cream into the batter until it is evenly incorporated.
Pour and Top: Transfer the batter to the prepared baking dish. Sprinkle the remaining 2 tablespoons of granulated sugar evenly over the top of the batter.
Bake: Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Cool: Allow the cake to cool completely in the baking dish before slicing and serving. Enjoy!
