Preheat your oven to 375°F (190°C).
Roll out the pie crust and fit it into a 9-inch pie pan. Set aside.
In a large skillet, heat the olive oil over medium heat. Add the onion and bell pepper, and sauté until they are soft, about 5 minutes.
Add the garlic and cook for another minute until fragrant.
Add the shrimp to the skillet and cook until they are pink and opaque, about 3-4 minutes.
Stir in the heavy cream, cheddar cheese, Old Bay seasoning, salt, and pepper. Cook until the cheese is melted and the mixture is well combined.
Pour the shrimp mixture into the prepared pie crust.
Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and the filling is bubbly.
Remove from the oven and let it cool for a few minutes before slicing.
Garnish with fresh parsley before serving.
Variations & Tips
For a spicier version, add a pinch of cayenne pepper or some chopped jalapeños to the shrimp mixture. If you have picky eaters, you can substitute the bell pepper with finely chopped carrots or omit it altogether. For a more indulgent pie, try adding some cooked bacon or crab meat to the filling. You can also use a homemade pie crust if you prefer, or try a gluten-free crust for those with dietary restrictions.
