Preheat your grill to medium-high heat.
Rub the chicken breasts with olive oil, salt, pepper, and garlic powder.
Grill the chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear.
While the chicken is grilling, steam the broccoli florets until tender but still vibrant green, about 4-5 minutes.
In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
Stir in the heavy cream and bring to a gentle simmer. Add the Parmesan cheese and lemon juice, stirring until the cheese is melted and the sauce is smooth.
Slice the grilled chicken and arrange it in bowls with the steamed broccoli.
Drizzle the creamy garlic sauce over the chicken and broccoli.
Garnish with chopped parsley before serving.
Variations & Tips
For a bit of heat, add a pinch of red pepper flakes to the garlic sauce. You can also substitute the chicken with grilled shrimp or tofu for a different protein option. If you prefer a dairy-free version, use coconut cream and nutritional yeast in place of the heavy cream and Parmesan cheese. Adding a handful of spinach or kale to the broccoli can enhance the nutritional value and color of the dish.
