My simple Kritharaki casserole with feta takes just 10 minutes. This quick recipe is ideal for busy family life with children and for the after-work kitchen after a long day.

Ingredients for my Kritharaki Casserole Recipe
Ground beef – for our vegetarian Kritharaki casserole, we use vegan ground beef
Kritharaki – Greek rice-shaped pasta, also called orzo, is small and round, often used in soups, salads, and recipes like our Kritharaki casserole. They are also very popular as a side dish to meat or fish dishes in Greek and Mediterranean cuisine
Feta – you're probably familiar with it from supermarket shelves or your vacation in southern countries. This Greek cheese is made from sheep's or goat's milk and is brined. This gives it a salty and slightly sour flavor, which gives our Kritharaki casserole just the right kick. You can substitute it with related products like feta cheese or sheep's cheese.
Vegetables What's a must-have in a healthy recipe for kids and family? Vegetables! That's why I also add peppers, tomatoes, onions, garlic, and olives to this Greek pasta and mince casserole.

Make your own Kritharaki casserole with vegetables.
Wash or peel the onions, bell peppers, and tomatoes and chop them.
Mix the vegetable broth with the tomatoes, crème fraîche, paprika, rosemary, and garlic.
Season the ground meat and brown it (not necessary for vegan mince).
Brush a casserole dish with olive oil and fill it one after the other with Kritharaki, ground meat, tomatoes, bell peppers, onion rings, and olives.
Pour the tomato sauce over the casserole, sprinkle with feta, and bake at 200°C (top/bottom heat) for 45 minutes.

Ingredients for 4 servings.

250 g Kritharaki

180g vegan ground beef (or real ground beef)

150g feta cheese

100g baby tomatoes

80g bell peppers

1 red onion

1 garlic clove

50g pitted olives

150g chopped tomatoes

2 tbsp crème fraîche

1 tbsp sweet paprika

1 tsp rosemary

1 tbsp olive oil
Preparation:
Wash the vegetables. Halve the tomatoes and olives. Peel the garlic. Slice the onion and bell pepper into thin rings.
Brush the baking dish with olive oil. Preheat the oven to 200°C (top/bottom heat).
Mix the hot vegetable broth with the chopped tomatoes, crème fraîche, paprika, rosemary, and press in the peeled garlic clove. If you want to prepare the kritharaki casserole with minced meat, season it with salt and pepper and fry it in a pan until crumbly. You don't need to prepare the vegetarian minced meat; you can use it raw in the casserole directly.
Layer the ingredients one after the other in the casserole dish in the following order: Start with the kritharaki, then the vegetarian minced meat, baby tomatoes, bell peppers, onion rings, and olives. Pour the tomato and vegetable broth over the meat.
Finally, crumble the feta cheese over the casserole. Now bake the kritharaki casserole with feta in the lower third of your oven for 45 minutes.
