Honey-Glazed Roasted Brussels Sprouts with Bacon

Instructions:
Preheat Oven:
Preheat your oven to 425°F (220°C).
Prepare Brussels Sprouts:
In a large bowl, toss the Brussels sprouts with olive oil, honey, salt, and black pepper until evenly coated. Spread them out in a single layer on a baking sheet.
Cook Bacon:
Arrange the bacon pieces on a separate baking sheet.
Roast:
Place both baking sheets in the preheated oven. Roast for 20-25 minutes, or until the Brussels sprouts are tender and slightly caramelized, and the bacon is crispy. Stir the Brussels sprouts halfway through cooking for even browning.
Make the Glaze:
While the Brussels sprouts and bacon are roasting, prepare the glaze. In a small bowl, whisk together the maple syrup, Dijon mustard, balsamic vinegar, and red pepper flakes (if using).
Combine and Serve:
Once the Brussels sprouts and bacon are done, transfer them to a large bowl. Drizzle the glaze over the top and toss gently to coat. Serve immediately while warm.
