Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
In a large bowl, mash the ripe bananas until smooth.
Add the oats to the mashed banana and mix well until all the oats are well coated and the batter has a smooth consistency. If you like, you can also add the vanilla extract at this point for extra flavor.
If you chose to use chocolate chips or nuts, stir them into the batter and mix well to distribute evenly.
Using a tablespoon or slightly damp hands, scoop out portions of the dough and form small mounds onto the prepared baking sheet. Be sure to leave a little space between each cookie as they will spread slightly during baking.
Place the baking sheet in the preheated oven and bake the cookies for about 12 to 15 minutes, or until golden brown and slightly crispy around the edges.
Once baked, remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
