Instructions:
Preheat oven: Preheat oven to 350 degrees F (175 degrees C). Grease a round 9-inch baking dish.
Prepare the topping mix: In a small bowl, sift together ¾ cup dark brown sugar and 2 tablespoons cornstarch. Set aside.
Combine dry ingredients: In a large bowl, combine 1 ¼ cups all-purpose flour, ⅓ cup dark brown sugar, and 2 teaspoons baking powder. Mix until evenly combined.
Add wet ingredients: Stir in ½ cup melted butter, 1 egg, ½ cup whole milk, and ¼ cup dark corn syrup until just combined.
Pour batter: Transfer the batter to the prepared baking dish.
Sprinkle topping: Sprinkle the brown sugar and cornstarch mixture evenly over the top of the batter.
Add boiling water: Boil 1 ¾ cups of water. Carefully pour the boiling water onto the back of a large spoon and let it run off onto the top of the cake, drizzling it evenly over the entire surface.
Bake: Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
Serve: Scoop to serve and drizzle the sauce from the bottom of the dish over the top. Serve warm, ideally with vanilla ice cream. Enjoy!
