2. Prepare the Pancake Batter
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, mix the buttermilk, beaten egg, melted butter, and vanilla extract until smooth. Gradually pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix, as this can make the pancakes dense. Let the batter rest for 5 minutes to ensure extra fluffy pancakes.
3. Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray. Pour about 3 tablespoons of batter onto the skillet and spread it into a small round shape, about the length of a sausage link. Cook for 2-3 minutes until bubbles form on the surface and the edges start to set. Flip carefully and cook for another 2-3 minutes until golden brown. 4. Wrap the Sausages
While the pancakes are still warm, place a cooked sausage link in the center of each pancake. Gently roll the pancake around the sausage, positioning the seam side down so it stays wrapped. Repeat this process for all sausages.

Arrange the breakfast pigs in a blanket on a serving plate and drizzle with warm maple syrup or serve with a side of syrup for dipping. You can also sprinkle them with powdered sugar or serve with fresh fruit for an extra touch of sweetness.
