Ingredients:
For the Crust:
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup (1 stick) cold unsalted butter, cut into cubes
4-6 tablespoons ice water
For the Filling:
6 slices thick-cut bacon, diced
1 medium onion, finely chopped
4 large eggs
1 1/2 cups heavy cream
1/2 cup grated Gruyère cheese (or Swiss cheese)
Salt and freshly ground black pepper
Pinch of nutmeg (optional)
Instructions:
Prepare the Crust:
In a large bowl, whisk together the flour and salt.
Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
Gradually add the ice water, 1 tablespoon at a time, mixing until the dough just comes together.
Form the dough into a disk, wrap it in plastic wrap, and chill for at least 30 minutes.
On a lightly floured surface, roll out the dough to a 12-inch circle.
Transfer the dough to a 9-inch pie plate or quiche dish.
Trim and crimp the edges.
