As a popular ingredient from oriental cuisine, chickpeas are not only used in salads, but also in , , and as a snack.

Wherever the round legumes are used, there is always a pinch of cumin, which underlines their natural taste.

For a stronger oriental note, I recommend some fresh coriander, curry powder or ready-made spice mixtures, such as Ras el Hanout (a floral mixture with pepper and saffron), Zatar (a herb combination of marjoram, thyme and cumin) or Baharat (a spicy mixture of chili, cumin and garlic).

Would you like to make the chickpea salad vegan? Simply replace the honey with maple syrup.
The chickpea salad with tomatoes also goes really well with feta cheese. Cut it into small cubes and gently fold it into the summer salad at the end.
I always make it easy for myself and use chickpeas from a jar or can for the salad. If you like it a bit crunchier, you can briefly roast the chickpeas beforehand. Check out my recipe for that.
Vary the vegetables and ingredients for the chickpea salad as you like. I also like to prepare it with bell pepper, a small can of lentils, mint or coriander in the dressing. Your chickpea salad will be Mediterranean if you leave out the cumin and use mozzarella and dried tomatoes instead. Diced avocado is also a nice addition to the chickpea salad.
