In a large bowl, combine the flour, cocoa powder, baking powder, baking soda and salt.
In a separate bowl, combine the applesauce, honey (or maple syrup), melted coconut oil, eggs and vanilla extract.
Add the wet ingredients to the dry ingredients and mix until just combined.
Add the almond milk and mix until smooth.
Prepare the apple layer:
In a separate bowl, combine the apple slices, honey (or maple syrup), cinnamon, nutmeg and lemon juice.
Assemble the cake:
Pour half of the batter into the cake tin.
Arrange the apple slices evenly on top of the batter.
Pour the remaining batter over the apple layer.
Baking:
Bake the cake for 45-55 minutes, or until the top is springy and a toothpick inserted into the center comes out clean.
Cooling and serving:
Allow the cake to cool in the pan for 10 minutes, then carefully remove it and let it cool completely on a wire rack.
