Preheat oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Add the mashed bananas, eggs, and vanilla extract, mixing until well blended.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the banana mixture, alternating with the sour cream, and mix until blended. Stir in the chopped walnuts.
Pour the batter into the prepared pan and spread evenly. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
While the cake bakes, prepare the frosting. In a medium bowl, beat together the softened butter and powdered sugar until smooth. Add the vanilla extract and milk, mixing until the frosting is creamy and spreadable.
Once the cake has cooled completely, spread the frosting evenly over the top. Garnish with additional chopped walnuts if desired.
