Zucchini egg baskets; An original idea that you can try now

🛒 Ingredients:
🥒 2 medium-sized zucchini
🧀 50 g grated parmesan
🥚 5 eggs (4 for the baskets + 1 for the mixture)
🌿 2 tablespoons chopped parsley
🧅 2 spring onions, finely chopped
🌶 1/2 teaspoon sweet or hot paprika
🥄 2 tablespoons flour (can be whole wheat or oat)
🧂 Salt and pepper to taste
🛢 1 tablespoon olive oil
👨‍🍳 Preparation:
1️⃣ Preparation of zucchini
✔️ Grate the zucchini and squeeze out the excess water.
2️⃣ Mix the ingredients
✔️ In a bowl, mix the zucchini, parmesan, chopped onion, parsley, herbs, flour and an egg.
3️⃣ Form the baskets
✔️ Form small nests from the zucchini mixture on a baking sheet lined with baking paper.
4️⃣ Bake
✔️ Bake for 10 minutes at 180°C until light brown.
5️⃣ Add eggs
✔️ Crack an egg into each basket and bake for a further 8-10 minutes until the white is set and the yolk remains creamy.
